August Garden Gals

Thursday evening we had our first official gathering of the Garden Gals.  Our lovely hostess, Mary Jane Medlin welcomed us all. We gathered around food brought by three volunteers. Eventually we migrated to the living room to play a round of Trivial Pursuit. Laughter, wrong answers, and more conversation rounded out the night. 

If you weren’t able to make it this time, then plan to with us for our next gathering: Third Thursday of the month at 6:00. In September we are scheduled to meet at Frances Menjivar, 12501 Enfield Park.

Great Recipe

Lemon Blossoms

1 box yellow or lemon cake mix

1 box instant lemon flavored pudding

4 large eggs

¾ cup plus 3 tablespoons vegetable oil, divided

4 cups powdered sugar

1 tablespoon lemon zest (about 1 lemon)

1/3 cup fresh lemon juice

3 tablespoons water

Preheat oven to 350.  Spray mini muffin pans with nonstick cooking spray.  In a large bowl, combine cake mix, pudding mix, eggs and 3/4 cup oil.  Beat for two minutes.  Spoon 1 tablespoon of the batter into each muffin tin.  Bake for 12 minutes.  Turn the warm cakes onto a cloth towel.

In a medium bowl, combine powdered sugar, lemon zest, lemon juice, remaining 3 tablespoons oil and water.  Stir until smooth.  Dip the cakes into the glaze (I used 2 forks), covering as much of the cakes as possible.  Place the cakes on a wire rack with wax paper underneath to catch the drips.  Let the glaze set thoroughly before storing in an airtight container.
